Date: 2007-08-28 10:28 pm (UTC)While they're draining, I pour off all but a couple tblsp of the oil, return it to the heat, and add butter, capers, lemon juice and white wine. I bring that to a boil, return the chicken to the pan, reduce the heat and cover, and let it simmer for about twenty minutes.
Next time I make it, I'll pay more attention to the amounts. :D
At which point the boys are usually hanging over the pan, demanding to know when it'll be ready. *sigh* If I'm lucky, I get seconds (which I pack for lunch the next day.)
